Great Recipe for Summer Squash

As mention in my post  ” Another Tasty Vegetable Suitable in Hypoglycemia Diets“  here it is!  Why not give it a try.   I actually went as far as trying the same recipe with a buttnut squash and it was just as tasty.

Baby Marrows with Almonds Bake

 

4-6 Large baby marrows 4-6
1 Small onion 1
15 ml Dried basil 3 tsps
50 g Mushrooms 2 oz
10 ml Canola or good vegetable oil 2 tsps
25 ml Almonds 2 tblsp
1 slice Fresh rye bread – crumbed 1 slice
1 Small tomato, skinned and chopped 1
  Salt and freshly ground black pepper  

  1. Parboil the whole baby marrows for a few minutes, then cut them in half lengthwise.
  2. Scoop out the seeds and flesh  – set the skins to one side, chop the flesh and set aside.
  3. Chop the onion, basil and mushrooms and fry in the oil until tender. Set aside.
  4. Crush the almonds, mix with the breadcrumbs and place under the grill, turning frequently until toasted.
  5. Combine the breadcrumb and mushroom mixture with the chopped marrow flesh and tomato.
  6. Season to taste.
  7. Fill the marrow skins, place on a baking tray and bake in a moderate oven (180°C) (350°F) (Gas mark 5) for 30 mins.
