Here’s a quick, tasty salad to serve on the side with a main meal.
Beetroot & Orange Salad

| 200g | Fresh beetroot | 7 ounces |
| 2 | Large oranges | 2 |
| 100ml | Fresh orange juice | ½ cup |
| 2.5 ml | Crushed ginger | ½ tsp |
- Wash and boil the beetroot until tender
- Peel, then dice or slice once cooled and place in a serving bowl
- Peel the oranges and divide into segments or slice. Add the beetroot
- Mix the orange juice and ginger and pour over the beetroot and oranges.
