Hypoglycemia Dieting – Beetroot and Orange Salad

 

Here’s a quick, tasty salad to serve on the side with a main meal.

Beetroot & Orange Salad

Serves 4 – 6
200g Fresh beetroot 7 ounces
2 Large oranges 2
100ml Fresh orange juice ½ cup
2.5 ml Crushed ginger ½ tsp
  1. Wash and boil the beetroot until tender
  2. Peel, then dice or slice once cooled and place in a serving bowl
  3. Peel the oranges and divide into segments or slice.  Add the beetroot
  4. Mix the orange juice and ginger and pour over the beetroot and oranges.
