Recipes for Hypoglycemia Low Blood Sugar

Hypoglycemia requires a complete change of attitude towards your food choices.  It doesn’t have to be boring and you don’t have to live only on bland meals.  Of all the choices you have to make to improve your health and escape the grip of hypoglycemia, it is the easiest change to make as it brings such good rewards.

You will find it is fascinating to collect a book of recipes which will keep you on the right road to recovery.  Here is an example of a one day meal plan and the recipe of one of the many delicious recipes that can be found in the e-book.

Breakfast
1 wholegrain waffle topped with ¾ cup sliced strawberries and a tablespoon of low-fat plain yogurt

Snack
Sliced raw vegetables and 1 ounce cheese

Lunch
1 serving Green Bean & Potato soup.
1 slice wholegrain toast or roll with ½ oz. low-fat Cheddar cheese.

Snack
1 small pear

Dinner
Chinese-style Vegetables with Sole
1 cup brown Basmati rice.
¼ cup low-fat plain yogurt mixed with ½ cup canned peaches in natural juice.

Snack
3 cups flavored popcorn.

African Potatoes & Spinach

2 medium potatoes                1 Tsp curry powder
2 cups frozen cut spinach            1¾ Tsps ground cumin
1 medium onion                    ½ Tsp ground turmeric
2 Tblsps vegetable oil                ¾ Tsp ground coriander
3 large cloves garlic                ¼ Tsp salt
½ cup fat-free yogurt                ¼ Tsp ground black pepper
2-4 Tblsps water

•    Scrub and cut potatoes into ½ ” pieces, chop onion.
•    Cook potatoes in a steamer for 20 mins. until very soft, transfer to a bowl and cover to keep warm.
•    Heat the oil in saucepan on medium heat. Add crushed garlic and onion stirring until soft.  Add all the spices and continue stirring for a further 30 seconds.
•    Add potatoes, stirring frequently, cook for 5 mins. or until brown and crispy
•    Add spinach tossing gently. Cook till heated through. If needed, add 1 tblsp water at a time.
•    Serve hot with yogurt spooned on top.
